Mini Savory Breakfast Casseroles

This breakfast recipe is perfect for couples but can easily be doubled (4 ramekins) or tripled (6 ramekins) based on the number of foodies in your gathering.


Time To Prepare:

About 40 minutes (includes prep time and baking)


Foodie Tips:

  • The amounts of ingredients shown below are for 4" diameter ramekins.


Ingredients:

For The Ramekins:

Spray To Coat Ramekins  |  I Used Olive Oil Spray 1 ½ slices  |  Your Favorite Bread, Cubed


Filling:

4  |  Eggs ½ Cup  |  Heavy Cream

4 Slices |  Cooked Bacon, Chopped & Divided - 2 Slices For The Filling & 2 Slices For The Toppings

½ Cup  |  Fresh Spinach, Chopped or Torn

½ To 1 Cup  |  Shredded Mozzarella 1/3 Teaspoon  |  Ground Mustard

1/3 Teaspoon  |  Kosher Salt

A Few Cracks |  Fresh Cracked Black Pepper


Toppings:

2 Slices From Above |  Cooked Bacon, Chopped

6 or 7  |  Grape or Cherry Tomatoes, Cut Into Thirds

Sliced Scallion


What To Do:


1. Preheat your oven to 350°F.

2. Spray the inside of two ramekins with cooking spray. Put them on a baking sheet and set aside. 3. Divide the cubed bread between the ramekins. 4. In a large bowl, beat the eggs, heavy cream, ground mustard, salt, and pepper until well blended. Stir in two slices of the chopped bacon, the spinach, and the mozzarella. 5. Divide the egg mixture over the cubed bread in each ramekin.


6. Transfer the baking sheet with the ramekins to your preheated oven and bake for 30 to 35 minutes. Remove from oven and let rest for about 5 minutes, add your chosen toppings (above), and serve! Yield: 2 ramekins
