Texas Avocado Toast


Toast With A Twist While there may be a culinary tug of war between Australia and California regarding the origins of avocado toast most of us will agree that it's our favorite sidekick that brightens up queso, fajitas, burgers and everything in between. Often served simply on a chip this heart-healthy fruit is the poster child of good fat, packing almost 20 vitamins, minerals and nutrients under its belt.

With the addition of jalapeños and hot sauce, this avocado toast will definitely have your tastebuds happily engaged in a Texas two-step of flavor. Topped with grated hard boiled egg and this is one party to remember!

Time To Prepare: If your ingredients are all ready you'll only need about 5 minutes to assemble the toast. If making the guacamole add 15 minutes (minus any marination time) and if making the eggs about 25 minutes.

Foodie Tips:

  • If you're making your guacamole ahead of time you can keep it fresh and green by placing it in a bowl and laying some cling wrap on top of the salad. Gently press things flat to remove any air and keep it chilled in the fridge. Using this technique I've been able to keep guac as green as day one for several days thereafter!

  • If you want a foolproof method for making hard boil eggs look no further: 1) Place eggs in a pot and add water one inch above the eggs. 2) Bring things to a boil over medium-high heat. When the water begins to boil turn off the heat and cover the pot with a lid for 10-12 minutes to cook. The 10-minute eggs will have a creamy yolk, while the 12-minute yolks will be paler and opaque, with a chalkier texture (my preference for this recipe). 3) Drain the hot water and transfer the eggs to an ice bath to rest for 15 minutes. Peel and you're ready!

Avocado Toast Ingredients:

1-2 Cage Free Eggs, Plan For 1 Egg For 2 Slices Of Toast 2-4 Slices Toast, Bagel, Or English Muffin (Whole Wheat Muffin Shown Above) To Serve (Optional) |  Mayonnaise

2-3 Tablespoons |  Guacamole (My Homemade Recipe Is Below) To Serve (Optional) |  Everything But The Bagel Seasoning To Serve (Optional) |  Sriracha Hot Chili Sauce (Or Your Favorite Hot Sauce) Ingredients For Making Homemade Guacamole:

3 Avocados, De-Seeded And Cubed 2 Tablespoons Fresh Lime Juice 3 Tablespoons White Onion, Diced

1 Jalapeño, Sliced Thin And Diced (I Leave Some Seeds In For More Kick)

1 Roma Tomato, Cubed (About 3 Tablespoons) 2 Tablespoons Cilantro, Chopped ¼ Teaspoon Garlic Power ½ Teaspoon Kosher Salt

2 Tablespoons Jalapeño Juice From A Jar Of Pickled Jalapeños

What To Do: 1. I recommend making your guacamole first, as the longer it rests the better the flavors will mingle. In a medium bowl add the avocados and lime juice and gently combine. You can use a fork if you prefer your guac smooth (I like mine in between smooth and chunky). Add the remaining ingredients from above and combine some more. Adjust the flavor to your liking. To keep your guacamole fresh and green you can add a little more lime juice on top before covering it with cling wrap. Press the cling film onto the guac to keep air out. Place your guacamole in the fridge to chill. 2. Boil your eggs (see the foodie tip above). Peel, and set aside. 3. Toast your chosen bread-like object and warm it up to your desired doneness. Place it on a plate and let's get it dressed. 4. If you'd like a little more flavor coat the muffin with mayonnaise then add a generous spread or two of the guacamole on top. 5. Grate ½-1 boiled egg on top of the guacamole to your preference. I always strive to get a good mix of white and yellow shavings on each slice. 6. Top the avocado toast with your hot sauce and bagel seasoning and dive in. Extra points if the bread is still toasty warm!
